The ingredients needed to prepare Thai Green Curry:

  1. Use 1 of chicken breast diced.
  2. Get 1 of green pepper chopped into chunks.
  3. You need 1 pack of baby corn.
  4. Provide 1 of red onion chopped into chunks.
  5. Prepare 1 handful of bamboo shoots.
  6. Take 1 can of coconut milk.
  7. Take 1 of fresh kaffir lime leaf.
  8. Prepare 1 tablespoon of olive oil.
  9. Use of Boiled Rice, to serve.

  11. You need of Thai green curry paste - jar or pre-made.

Steps to make Thai Green Curry:

  1. Cook the diced chicken in the olive oil for 2 mins on each side (4 mins in total).
  2. Add the chopped pepper, onion, baby corn, bamboo shoots and lime leaf, cook for 2 mins.
  3. Add the Thai green curry paste and cook for 2 mins.
  4. Stir in the coconut milk and cook for 2 mins.
  5. Boil rice per instructions (mine was ready in 2 mins). Drain, add to serving bowls. Add Thai green curry on top. Add lime garnish to finish.
