  1. Take 1 kg of Small onions.
  2. You need 30 grams of salt.
  3. Provide 1 tsp of dried chilli flakes.
  4. Prepare 1 tsp of coriander seeds.
  5. Take 1 tsp of mustard seeds.
  6. Prepare 1 tsp of black peppercorns.
  7. Provide 1 of bay leaf.
  8. Prepare 1 liter of cider vinegar.
  9. Get 1 tbsp of good sea salt.

  1. Salt peeled onions 12-24 hours.
  2. Rinse well and dry.
  3. Pack into sterilized jars (4x quart).
  4. Simmer 5 minutes vinegar, 1tbspn sea salt, bay leaf and spices..
  5. Fill each jar with hot vinegar mix, give a little shake and remove air bubbles..
  6. Divide spices between the jars.
  7. Place lids on jars and leave on the shelf for at least 10 days. The longer the better..
