The ingredients needed to prepare Thai Green Curry:

  1. Use of green Curry paste-.
  2. You need of lemongrass (if you don't have lemongrass,use lemon juice).
  3. Provide of galangal chopped.
  4. You need of kaffir lime leaves.
  5. Take of garlic cloves.
  6. Use of thai shallots(or green onion).
  7. Take of thai sweet basil.
  8. Provide of coriander leaves.
  9. You need of green chillies.
  10. Prepare of Other ingredients:-.
  11. Provide of tofu cut into cubes.
  12. You need of eggplant.
  13. You need of vegetable of your choice.
  14. Use of bamboo shoots.
  15. Provide of brown sugar.
  16. Prepare of coconut milk.
  17. Prepare of soy sauce.
  18. Provide of green beans trimmed.
  19. You need of oil.
  20. Use of Kaffir lime leaves.
  21. Provide of vegetable stock.
  22. Get of salt.
  23. Provide of Cashews to garnish.
  24. You need of Red chilli for garnish.
  25. Provide of Basil leaves for garnish.

Instructions to make Thai Green Curry:

  1. Place all 'Green Curry Paste' ingredients in a food processor or blender, and add 1/3 glass coconut milk or enough to blend, blend it and make smooth paste..
  2. Heat a wok or deep frying pan over medium-high heat. Drizzle in oil and add2 tbsp green curry paste. Stir-fry until fragrant (about 2 minutes).Add stock plus lime leaves or bay leaves. When sauce comes to a gentle boil, reduce heat to medium-low or just until you get a nice simmer. Add all vegetables, Simmer 7-10 mins, or until all vegetable soft enough to pierce with a fork..
  3. Pour soy sauce, and add the whole kaffir lime leaves and sugar, stir well..
  4. Add tofu and bamboo shoots, stir and cook for 5 minutes. Then stir in green beans and bean shoots, cook for a further 2 minutes. Taste and adjust seasoning to suit your taste..
  5. Serve with jasmine rice or plain rice..
